Workshop Overview

People have the right to expect the food they eat to be safe and suitable for consumption. Foodborne illness and foodborne injury are at best unpleasant; at worst, they can be fatal. But there are also other consequences. Outbreaks of foodborne illness can damage trade and tourism, and lead to loss of earnings, unemployment and litigation. Food spoilage is wasteful, costly and can adversely affect trade and consumer confidence.

Hazard Analysis Critical Control Point (HACCP) is a guideline and standard that control and reducing to an acceptable level of any safety hazards identified for the end products delivered to the next step of the food chain. The standards combine all generally-recognized key elements to ensure food safety at all points of the food chain.

To be certified as one of the HACCP player may seems easy to some of us that well worth with the requirement, but to maintained it is not as easy as you think.

This workshop is dedicated to HACCP personnel who are involved either direct or indirect to manage and control HACCP in their respective industry.

It can be either you are Quality Personnel, Entrepreneurs, Internal auditors or document controller.

Module Overview

Course Introduction and Ice-breaking on HACCP

This module will briefly focus on the level of understanding of the participant to the HACCP at their workplace, also background checking (either QA Team, HACCP Team, Entrepreneur, etc). This will provide indication to the trainer on the focus of the course. The role that the trainer shall play along the course.

Introduction to HACCP

To be HACCP Certified or as HACCP Certification holder, HACCP knowledge is compulsory. They need to know what is the purpose of getting the HACCP certification.

Understanding how HACCP assists the food industry

In order to ensure the implementation of HACCP, participants need to know the HACCP scopes covered in the food industry. They also need to know the reason for having HACCP certification for the business.

Defining hazard

Hazard can be found anywhere including in Food industry. It is important to identify the hazard at every stage of the process flow of production in order to maintain the product quality. Present of uncontrolled hazard in food industry can lead to fatality.

Defining CP, critical control point & OPRP

Once hazard have been identified, the next step is to analyzed on how to handle the hazard as not all hazard can be eliminate but can be control with designated method.
